Magical India ✨
January I was lucky enough to spend a couple weeks in India and I left feeling lighter than ever. The energy of this country is something else and I can’t wait to return. Just a little visual diary. ❣️
Forgot to add this little number to my last post, so thought she could have her own dedicated piece. The glorious three ingredient vegan chocolate mousse, topped with crushed pistachios, dried cranberries, and drizzle with evoo and salt. Winner winner. 🤎
2025 you’ve been a rollercoaster, but I’m really proud of this particular job that I’m ending it on… Thanks to @scoutproductions for booking me to feed the lovely team for their Christmas party at the iconic @regencycafeuk !! It was a crazy two days of prep and service and thanks to my sous @cassius_ker you smashed it. In no particular order here are some pics of the fabulous affair ❤️🔥

I’m not sure what struck me to write this today but here we are. I do feel like this is a very necessary post i’m going to share that you obviously don’t need to read, and it’s dedicated to Bali. Over twenty years ago (how?!) my family and I upped and moved to the very special island of Bali, Indonesia. Some people may roll their eyes; another white expat family moves to Bali. Negative connotations spring to mind I’m sure but back then Bali was nothing like what I’m seeing online today. It’s actually heartbreaking to see how Bali has ‘evolved’, mass influx of wellness influencers all seeking out some form of escape, but really the worst things I’m seeing is the destruction of the beautiful coastlines I use to grow up on, all raw and beautiful turned into more eye sore developments. Bali wasn’t made for this.
I was so lucky to call this tiny piece of the world my home for some years, and I owe it a lot for who I am today. I reflect a lot on that period of my life, the people I met and the madness that ensued. But what I really really came away with, was the love for the Balinese people and their pure spirit. I’ll never forget the their friendly faces and warm hearts, there’s nothing quite like it. And don’t even get me started on the food. I definitely have to big up Indonesian food for the way I see and eat food today. I’ll never forget my first nasi campur 🧡 the love affair started in that moment, I was hooked. You can’t beat fluffy white rice, with rendang, sayur, tempe, perkedel and all the sambals. When I went home almost ten years ago, I made sure I went to see Ibu Made to get her to teach me how to make beef Rendang her way. And my lord was it a treat to watch her in motion and then sit and eat with her and the crew. I now cherish that moment forever and I will keep that recipe close to my heart. Bali you remain in my heart forever. 💚
Wedding events are a different beast wow 🤠 two days of full on blood sweat and actually no tears this time around 😅Feet hurt, hands are sore but that was such fun!

I love leftover rice! For a recent private client’s lunch, I whipped them up a gingered up mushroom fried rice with a crispy egg and crispy shallots atop plus crispy chilli oil. Emphasis on the ginger, which isn’t only tastaaay but is also great for your wee bod. YURMMM.
Lime coriander marinated butter beans and cucumber on tostada with pickled coriander, onion and jalapeño for today’s client 💚🌮🌞

Posting to the main grid as I’m super proud of myself and the canapés I put out last night for my first ever solo gig as Aggie’s Kitchen. Even cooler, it was for international women’s day. A big shout out to girl @amiebd for supporting me. I’m still working out my own personal style food wise, but it all comes with experience and experimenting. If you or someone you know is in need of canapés for an event please get in touch 💚
