PRAWN RECHEADO
Recheado, from the Konkan coast, is shaped by Goa’s Indo-Portuguese kitchens and built on soaked dried chilies (primarily byadgi for color and heat), vinegar for acidity and preservation, garlic, and whole spices ground into a sharp, deep, punchy paste 👊
Here, fire-grilled prawns take that recheado masala head-on. The heat chars the edges, the paste caramelizes, and the natural sweetness of the prawn balances the spice. Pao served on the side isn’t optional, it’s necessary to drag through what’s left of the sauce 🤤

Tomorrow we hunt for the holy grail of plateware with chef Neel (@neelkajale ).
There are plenty of designs to dig through, and even a cabinet of custom shapes hiding in the attic of @nobleplateware , but in the end it’s a straightforward bowl at the front of the store that turns out to be the one.
We simply can’t wait for Monday night when we’ll welcome Chef Neel Kajale, from @addanyc 🍔 He’s serving up a Waygu “Chapli”-inspired burger with amul cheese and roasted garlic sauce on a toasted milk bun with a side of masala fries!
