Rising Star Chef Jackson Stamper of Ada's (@adas.lv ) layers his taleggio tart onto a parmesan crust made with Corto olive oil (@corto_olive ), rolled thin and baked until golden. The taleggio gets whipped with sugar and cream until light and fluffy, spread into the crust, and sealed with a thin layer of cherry gelée.
The sour cherry sauce, cooked down with red wine and reduced until the cherries fully macerate, finishes the plate alongside flaky salt and micro sorrel. It's the kind of restraint that defines the menu Stamper is building at Trees' Arts District spot, where he's leaning into Sommelier Kat Thomas' acclaimed wine program with succinct, ingredient-driven cooking.
