This August we’re thrilled to highlight frequent GrowNYC Wholesale customer, ACQ Bread Co. ACQ is an artisan studio in Carroll Gardens, Brooklyn milling fine flours in-house for small, handmade batches of nourishing bread. All of the wheat berries are freshly milled prior to mixing, including the red fife sourced from Gianforte Farm by way of GrowNYC Wholesale. ACQ’s process encourages the greatest complexity and character to bloom during fermentation. Through this holistic practice their bread develops flavor intertwined with nutrition. Notre chef boulanger Geffrey Marx s'est rendu à New York en début d'année pour échanger des techniques et des idées avec Tyler Lee Steinbrenner, chef boulanger et fondateur de @acqbread_co . Lors de leurs visites respectives, ils ont collaboré pour développer des pains savoureux et nutritifs, tels que le Pain aux Graines et le Méteil aux Herbes. Le Pain aux Graines est une spécialité de Tyler. Geffrey a alors appris à faire germer les graines pour améliorer leur goût et les rendre plus disponibles pour notre organisme. À la Boulangerie du Couvent, Geffrey a voulu tester ce pain avec des blés anciens comme la Pétanielle Noire de Nice et la Saissette de Provence, tant pour la farine que pour les graines germées. Ces variétés sont non seulement plus intéressantes gustativement, mais aussi meilleures pour la digestion en raison de leur faible teneur en gluten. #boulangerieducouvent #hotelducouvent © Photo @adriannaglaviano

Applicants must be open to all aspects of bakery life. We focus on crafting delicious bread, taking care of our space, and sharing with community. All our actions are connected.
