A COZY KITCHEN COOKBOOK 📕 is available for Pre-Order right now and here is a sneak peek inside the book! Comment COZY and I’ll DM you the pre-order links! 🤎 Over the years I received so many messages, “come out with a new book!” But honestly I haven’t had much to say. Until now… 🤎 My life over the years has changed so much. I got married, I moved, got divorced. And then found new love and became a mom. My life is so new and different. And this cookbook is a true reflection of all the cozy things I love to cook and bake for my family. I’m grateful that so many of you have been with me throughout the entire journey. 😭 🤎 This book is broken up by moods. Think recipes for Lazy Weekends like my Juicy Ropa Vieja, Slow Sunday Bolgonese or Fall Fruit Sangria. Or recipes for a mid-week rut. I know we all go through it. One-Pan Shrimp Orzo, Au Poivre Mushroom Rigatoni. I have a chapter on Work From Home Lunches that take 10 minutes, Reset Meals to Make, Cozy Weekend Bakes like my Hummingbird Cake (this recipe is better than my carrot cake!). The solution is here for you. Because they’re my solutions too! This book was one of the greatest creative experiences of my life. And I cannot wait to share it with you all! #HERDEZBrandPartner The crispiest fish 🐠 tacos 🌮 topped with @HerdezBrand Guacamole Salsa and crunchy slaw served on a soft tortilla. Best combo for any Cinco de Mayo gathering. Baja Fish Tacos: 3/4 cups all-purpose flour 1/4 cup rice flour 2 tablespoons corn starch 1 teaspoon paprika 1 teaspoon chili powder 1 teaspoon garlic powder 1 teaspoon onion powder 1/2 teaspoon kosher salt 1 1/4 cups beer (or sparkling water) 1/4 cup corn starch, for dredge 2 pounds cod, cut into 1-inch thick pieces V egetable oil for frying Corn or flour tortillas, for serving Limes, as garnish In a medium bowl, whisk together the all-purpose flour, rice flour, corn starch and spices: paprika, chili powder, garlic powder, onion powder and salt. Pour in the beer and mix until mostly smooth. In a shallow dish, add in the corn starch (we’re going to use this for a dredge) Lay the cod on a cutting board and sprinkle both sides with kosher salt. To fry the fish, pour in enough oil so it’s about 2 to 3 inches deep. Lightly coat the cod in corn starch and then immediately transfer to the batter. Allow any excess to run off and then place in the hot oil. Cook on both sides for about 2 minutes, per side. Transfer to a bed of paper towels. Sprinkle the fish as it comes out of the hot oil with sea salt. And repeat with the remaining fish. Add a scoop of the slaw to each tortilla. Add a piece of fish. Serve with lime wedges.
