Healthy eating got easier when I stopped treating carbs like the enemy and started finding nutrient-dense ones I enjoyed. New potatoes were a part of that. In season right now, high in potassium, naturally creamy, and filling enough that I wasn't reaching for something processed an hour later. If you've been avoiding carbs just to end up starving by 3pm, this is worth trying. Use a fork to mash them flat. Let them dry for another 5 minutes. Drizzle with olive oil, salt and any other seasoning. I used to think starving myself was the way to "eat healthy". Until I realized I needed to stop focusing on what to avoid and find nutrient dense foods I actually enjoyed. Asparagus is one of those. In season right now, easy to make, and the kind of green you genuinely benefit from eating a few times a week. Oven for 10 min (or a quick 3 min boil), lemon, garlic, olive oil, salt. Leeks are in season right now and most people don't know how to cook them. They have a mild, slightly sweet flavor that gets even better when you braise or roast them. Skillet with some stock, olive oil, salt, and thyme, then into the oven until they caramelize. Simple ingredients, restaurant quality results. Nutritionally they are part of the allium family alongside garlic and onions, so they bring similar anti-inflammatory benefits plus a good amount of fiber and vitamins A, C, and K. This is exactly the kind of vegetable that makes eating seasonally worth it. Better flavor, better price, and you are getting it at peak nutrition. Add your broth (or just use water, salt, onion/garlic powder, thyme, pepper) 5. Simmer for about 15 minutes until soft. 6. Add to your oven and cook for 30 minutes. Add thyme. 7. Enjoy!

Healthy eating doesn't require intricate bland recipes. Sometimes all you need are fresh ingredients, done right. Sweet potatoes are one of my go to carbs with a good amount of fiber and potassium. They can also hold their own as a great snack when you have a sweet craving or need some energy for your next workout. Wash, cut in half, bake at 400F for about 30 minutes and enjoy!
