It took just one hour to prep: homemade sour cream (raw kefir + raw heavy cream), beet kvass, feeding the sourdough, and washing bones for meat stock.
The rest is now left to do its work, fermenting and slow cooking overnight. 😋

Applauding all the bakers who’ve mastered the art—a soft loaf with that light, crunchy crust and the fine decor. 🥖 This was my very first attempt with einkorn flour: the crust knocks, the inside is soft, and I’m excited to keep practicing. Truthfully, I baked this warm loaf just so I could smother it with the most amazing butter from @stepladdercreamery 🧈✨🤤
First time making sauerkraut—and it was a hit. So simple: green cabbage, fresh fennel, caraway seeds, Celtic sea salt, water, attention, love, & care. I eat a heaping tablespoon every day. I love it, and my gut loves it too.
