Ingredientsïżœ(dough for 1 pizza â store-bought is perfect)
2 cups shredded mozzarella
1 cup shredded provolone
2 lemons, thinly sliced
~3 tbsp crushed pistachios
3 medium shallots, thinly sliced
6 cloves garlic, thinly sliced
2 handfuls fresh basil
olive oil (or orange citrus olive oil

MethodïżœSlice your shallots and garlic, set aside. Grate your cheese. Thinly slice your lemons.
In a pan over medium-low heat, add a drizzle of olive oil (citrus if you have it). Lay in your lemon slices, drizzle with a tsp of honey and let them soften for about 3 minutes, until the rind starts to turn slightly translucent. Flip, add a pinch of crushed red pepper and cook another minute. Donât overcook, they should hold their shape. Set aside.
Preheat your oven to 450°F. If using a pizza stone, let it heat with the oven. (A baking sheet works too.) Roll out your dough and transfer to your surface. Drizzle with olive oil and spread, Add your cheeses, then scatter over the shallots and garlic.
Bake for 10â15 minutes, until the cheese is bubbling. For extra colour, turn the oven up to 500°F for the last 5 minutes. Remove from the oven and finish with the warm lemon slices, crushed pistachios, fresh basil, a drizzle of citrus olive oil, and a touch more honey. Sprinkle with fennel pollen and fleur de sel to really treat yourself- its so worth it.
