Simple but tasty gin cured mackerel, cucumber compressed in a gin and honey. A zesty orange and lime dressed over the cucumber. With pickled radish and dill for garnish.
3 way chicken dish. Confit chicken wings, shredded, coated in flour + seasoning which has then been deep fried so you have lil fried bits of chicken heaven. Crispy chicken skin. Chicken crown with a watercress + butter marinade. So soft, so tasty. Sweetcorn puree, chilli pickled shallot rings and a charred corn salad dressed with zingy lime and toasted chia, sunflower and sesame. Yum yum 🌽🥗🍗
