Why are so many African chefs highly talented yet financially constrained?
The answer, he explains, is not a lack of skill, but a knowledge gap.
For years, culinary development across the continent has focused heavily on technique, mastering the art of cooking. But the industry demands more than craft. It requires an understanding of the business of food: systems, operations, global standards, and strategic positioning.
This gap is visible at the highest levels.
Across many five-star hotels in Africa, executive chef roles are still dominated by foreign professionals not necessarily due to superior talent, but often due to broader industry exposure and structured knowledge.
Chef Kefas took a different path.
Through global certifications and institutional training, he built expertise beyond the kitchen, gaining insights that positioned him competitively within the industry.
