Every coffee shop relies on its equipment. Here’s why we combined Synesso MVP espresso machine with Bentwood grinders: 👇👇👇 Why Synesso? Synesso MVP has the best temperature stability between extractions. The machine comes with a PID panel which allows temperature setup and different volumetric programs across the group-heads, which translates to improved consistency when dialing-in. Additionally, each group supports five extraction profiles: Manual (M), Volumetric (VP1 and VP2), and Manual Pressure (MP1 and MP2). This allows us to have better shot output control and when combined with pre- and post-infusion options (3-9-3 bars), it opens up the flavours of our coffee selection for that day. Why Bentwood? We chose Bentwood grinders for their ability to produce targeted, controllable grind size distributions, easily calibrated for diverse roast profiles and coffee origins. The H75 Gravimetric has a high-speed output, integrated precision scale for gravimetric dosing, and reduced waste between the shots due to its compact design. Its servo motor provides automated and precise grind size adjustment, and consistent output during high-volume service. On the other hand, the Vertical Single Dose 63 features a vertical pre-breaker that crushes beans before they hit the burrs, intentionally generating more fines for a cleaner and sweeter cup. Together, they allow us to have a more precise grind profile selection for both light and medium roasts. What do we get by combining the two? This combination directly impacts output quality, shot-to-shot stability and consistency, and the ability to showcase our Nordic-style roast profiles with complete control over coffee’s sweetness and acidity, with minimal variance during rush hours. Image 1 - Introduction You might’ve seen these little boxes on our shelves or in the webshop, so here’s a proper introduction to a project we’ve been quietly experimenting with for a while: 7AM Instant Coffee. Swipe to peek behind the scenes… Image 2 – Cold Brew Concentrate The process begins with making a cold brew, but not the one we serve at our café. We use a specific coffee-to-water ratio and grind size, dialed in to bring out the clarity and balance of our filter coffees, not to mimic espresso or other, commercial instant coffees. That’s where the freeze-dryer comes in. Image 3 – Lyophilizer Info The lyophilizer machine plays a big role in the texture of our instant coffee. Most instant coffees use nitrogen puffing, which creates that familiar foamy layer when brewed. We don’t use that process, so there is no foam, just a clean cup. Video & Image 4 – Lyophilizer Process Our cold brew concentrate is poured onto trays and placed inside the lyophilizer. The machine slowly removes water through freeze-drying, preserving flavor without heat or additives. What’s left is coffee in its most stable, concentrated form, ready to come back to life in your cup. Images 5 & 6 – Problems and Fails We tested different grind sizes, brew ratios, temperatures, TDS levels, and formulas. Many batches failed, and some that worked still didn’t taste the way we wanted. Getting it wrong helped us understand how each variable shapes the final cup. Images 7 & 8 – Success 7AM Instant Coffee is now available online and in the café. For best results, add 200 ml of 70 °C water, stir, and enjoy a cup that’s clean, fruity, and true to its origin. If you’re adding milk, reduce the amount of hot water to keep the coffee balanced. Here, we’ll document our experiments, data, sensory notes, behind-the-scenes processes, and other research related to sourcing, extraction, roasting, and more. Because we believe knowledge grows through community, the lab will also serve as a hub for events, open cuppings, and discussions with coffee enthusiasts and professionals who want to explore coffee more deeply.
