Nothing wasted. Spent coffee pods from our Nespresso machine are soaked in whiskey, drawing out deep roasted notes before being shaken into a whiskey sour. Ask for the Ecobar selection next time you’re at the bar.

Ask for our “Ecobar” selection the next time you’re at the bar. Made by giving our kitchen’s ingredients a second life, these drinks use skins, rinds, peels, pulp and chaff to reveal delicate umami notes. Take this Pineapple Rum, for example - infused with pineapple skins for five days, bringing notes of warm toast and caramel depth to pineapple’s natural sweetness.
