From the limestone soils of Saumur in the Loire Valley, Domaine Guiberteau has become one of the benchmark producers for Cabernet Franc. Their 2023 Saumur Rouge is fermented with native yeast and raised with a light touch to preserve freshness, structure, and site expression.
The result is Cab Franc with bright red fruit, crushed stone, graphite, herbs, and fine tannin. Precise, savory, and distinctly Loire 🇫🇷

Born and raised in Houston, Dominic Claude left at a young age to serve in the United States Navy, where he was stationed in Seattle and traveled extensively around the world. After returning home, he found his way into Houston’s hospitality and wine scene, bringing with him a passion for genuine service, attention to detail, and creating memorable guest experiences.
Before joining 13 celsius, Dominic worked with Pappas Restaurants at Pappas Bros. Steakhouse and Little’s Oyster Bar, helping refine his approach to polished, high-quality hospitality. He has also continued developing his wine knowledge alongside Brandon Kerne of AOC and earned his Introductory Sommelier certification through the Court of Master Sommeliers, with plans to pursue further certification in the future.
Join us in welcoming Alessandro Giacosa, visiting from Piedmont, Italy and representing his family’s estate, Giacosa Fratelli. On Monday, May 11th from 5–7pm, we’ll be pouring a thoughtful lineup of his family’s five wines for $20/flight 🍷🇮🇹
For five generations Giacosa Fratelli winery has been handed down from father to son. With 120 acres across the different communes and crus of Barolo and Barbaresco, they have boasted some of the best wines of Piemonte since 1895. The winery began with a stroke of luck when Giuseppe Giacosa won the Italian lottery and purchased the family vineyards that are now run by Mauro and his twin brother Alessandro. They have taken the reigns with pride and aim to blend tradition with innovation so as to honor their family legacy while still bringing forth a fresh perspective.
While Giacosa Fratelli’s vineyards are spread across some of Piedmont’s most pedigreed sites, terroir alone is not their defining variable. What truly distinguishes them is their staunch dedication to sustainability. The estate is powered entirely by solar energy, employs systems to capture and repurpose CO₂ generated during fermentation, and utilizes a closed-loop water management program that harvests and redistributes rainwater for vineyard use. Beyond these core initiatives, additional measures are in place to systematically reduce their overall carbon load as they work toward a zero-emissions production model. Their legacy blends Giuseppe Giacosa’s original dream with generations of dedication to the land, the vines, and sustainable practices that protect and preserve the integrity of the Giacosa wines.

For May’s chapter of our monthly Spotlight Series, we’re shifting the lens from geography to grape, focusing on Cabernet Franc: a varietal that tends to speak a little softer but carries a long, complicated story beneath the surface 🍇🍷
Often overshadowed by its more famous offspring, Merlot and Cabernet Sauvignon, Cabernet Franc (shortened to cab franc) rarely asks for attention, although it’s more than earned it. Over the last decade, it has begun to reassert itself in wine growing countries around the world. While its roots are firmly planted in France (particularly in the Loire Valley) its voice travels well. In California, Italy, and Argentina, Cabernet Franc takes on new inflections. It can be all restraint and quiet tension in one glass, then broaden into something darker, rounder, more textural in the next.

Spain is a country of contradictions: ancient vineyards and modern minds, traditions held tightly in one hand while innovation quietly reshapes the other. Home to the world’s largest vineyard area, Spain boasts a wine-growing history that is ancient and discontinuous. Though much of the current Spanish wine market is dedicated to heritage-style wines from traditional wine-making philosophies there are many different approaches in today’s industry. Several emerging modern-mindset winemakers are bringing diversity and talent to the table while safeguarding Spain’s long-cherished identity.
We will discuss some of the fascinating history that created these renowned wine regions as well as dive into the chasm of Spain’s past and current wine market in regard to styles and techniques.
We will have a guest Sommelier, Dale Ellington alongside Adele Wade and Elyse Wilson to guide you though 10 wines (primarily reds) that will showcase flagship producers top-quality wines, as well as discern the differences in styles of aged Spanish wines on the palate.
�We will of course touch on important aspects of terrior and wine laws for each region but also go into detail about the unique characteristics of Tempranillo, Garnacha (Grenache) and a few other indigenous grapes.

Please welcome another one of our new bartenders Scott to 13 celsius! 🥂 Formerly of Camerata, Scott is a wealth of wine knowledge and a wonderful addition to the team.
“Arlon Scott Crosthwait hails from Shallowater, TX and first moved to Houston in 1998 to attend Rice University. During his sophomore summer he made ends meet slinging avocado at the Hobbit Cafe, and has been working in food and beverage ever since, despite a BA in Biology. His love of beverage programs specifically was born as an insufferable beer nerd at Petrol Station, and later fostered as an absolute cocktail geek at Beaver’s Ice House. He turned his eye to the wine world in 2020 and has pursued this field with the nerdy energy and endless curiosity that brought him here in the first place, earning CMS Certified, WSET 3, and Italian Wine Scholar certificates between 2022 and 2025. A big fan of new wave, you may spot this dance floor beast at Numbers or Barbarella. And true to his roots, you might spot him at the zoo, birdwatching in the park, or at the Natural History Museum on his days off, almost always followed by a tasty beverage!“

Domaine Tempier “Lulu & Lucien” is the estate’s flagship cuvée, named for Lucie “Lulu” Peyraud and her husband Lucien, who were instrumental in defining modern Bandol and championing Mourvèdre in the region.
Founded in 1834 and revitalized in the mid-20th century, the domaine helped establish Bandol as one of France’s great terroirs for structured, age-worthy reds.
The wine is built primarily from Mourvèdre with smaller amounts of Grenache and Cinsault, sourced from multiple parcels. Expect dark fruit, earth, spice, and firm tannins. Enjoy a glass, half-glass or bottle today as a special part of our Spotlight Series highlighting the French Riviera 🍷

Elyse was born and raised in H-town. She left Texas to attend the Culinary Institute of America in Hyde Park, NY and after graduation moved around the East Coast before attending Florida International University in Miami for Hospitality Management. After twelve years in back of house, Elyse transitioned her focus to wine, spirits and sake. Currently a Certified Sommelier with the CMS, WSET 3 with distinction and an Advanced Sake Professional, she joined the 13 celsius team to help her work towards her Advanced Sommelier Certification. Elyse loves to hear about and share about wine travels and is always caught drinking bubbles in the wild! 🍾

We are thrilled to welcome Jay McDonald, founder and winemaker of EIEIO Wines, on Wednesday, April 8th from 5–7 PM for a special Flight Night highlighting one of the Willamette Valley’s most thoughtful and quietly boundary-pushing producers. 🍷
Founded with a deep respect for the land and a commitment to minimal intervention, EIEIO Wines reflects Jay’s hands-on approach from vineyard to bottle. Working primarily in Oregon’s Willamette Valley, Jay focuses on small-lot expressions that emphasize purity, texture, and a sense of place, often sourcing from distinctive sites in Yamhill-Carlton and beyond.
While rooted in tradition, Jay’s work embraces curiosity and experimentation, resulting in wines that are both honest and compelling. From classic expressions of chardonnay to structured, age-worthy pinot noirs, each bottle offers a layered perspective on Oregon terroir. Jay will guide us through the lineup, sharing stories from the cellar and vineyard, along with insight into his intuitive, detail-driven winemaking style.
The Willamette Valley’s cool climate and diverse soils lend themselves beautifully to wines of freshness, structure, and depth. EIEIO’s bottlings capture this balance with a slightly rebellious edge, showcasing both classic restraint and moments of unexpected character.
