Roganic’s @roganichongkong seasonal menu honors local produce and sustainability 🥦🥬🍆💚♻️In this concrete jungle, you’ll be surprised there are quality farms and apiary around, such as @zenorganicfarm.official @yiofarm . What Roganic can’t find in this little city, they source it from farms within 160km of the restaurant to limit carbon footprint. To reduce food waste, they creatively use every part of produce in multiple dishes! For example the wagyu 🐮, they use it in the tartare in amuse bouche, make broth for the chawanmushi and wagyu fat caramel in petit four; for the corn 🌽, chawanmushi and delicious mocktail in the soft pairing. The rest they pass it to food waste collection organization @ecpalhk . The effort and thought that are put behind the menu go way beyond the flavor and presentation but researching what’s available around and using every scrap to the fullest 💚🔥
The highlight for me was definitely the Steamed Custard. The creativity and imagination of this course! The unlikely medley of tendon, mushroom XO, lardo, corn, was beautifully orchestrated to give multitude of flavors and textures. Not only it fed my senses but the element of surprise added many brownie points to this dish 💚
